Tom Yum Soup Recipe.

While we are basking in the sun in Thailand, stuffing our faces with spring rolls, curries and pad thai, I thought I would give you my absolute favorite recipe for Tom Yum soup!
If you've never had it before, it's a popular Thai hot and sour soup that usually has prawns or chicken it in, but I kept it simple! Most of the groceries can be found at your local Asian grocery store, and if you live here in Winnipeg, my favorite place to go is Dong Thai! You might find some of the ingredients (galangal & kaffir lime leaves) in the freezer.
It's also delicious with coconut milk, rice noodles or extra hot sauce for those of you who like it really hot! The soup is really quick and easy to make, I hope you like it!

Alright, here are the instructions:
First you chop the lemongrass into large pieces so that you can take them out easily later, and then you put the first 8 ingredients in a pot and bring to a boil. While that's coming to a boil, you can chop up all of your vegetables and greens. Next you turn it down to medium heat and add the onion, celery, carrots and mushrooms and cook for 10 minutes. Then simply throw in the rest of the ingredients and simmer for 30 more minutes. If it's not quite spicy enough, add another scoop of tom yum paste! At the end you can take out the galangal, lime leaves & lemongrass if you'd like! Enjoy!

  1. My boyfriend's stepmother is Thai, she cooks the most beautiful Thai food for us every now and then - it would be lovely to return the favour, you've inspired me to look something up that I can surprise her with at some point when my cooking has improved!

  2. Yummmmmmy! I'm vegetarian, so I'd opt for Veggie broth instead of chicken broth (and no fish paste) but I bet it'd be just as good :]

  5. I love tom yum but I usually make the broth from scratch. Btw, Dong Thai is also my fave store as this store has plenty Indonesian food ingredients and the owner's couple is so lovely and friendly.
