Caprese quinoa salad.

Like what seems to be the whole rest of the world, I've been eating a whole lot of quinoa lately. I was getting a little tired of  my go-to recipes, so I decided to create a new one! I threw some of my favorite ingredients and flavours together in one bowl to create my spin on a caprese quinoa salad!  I know caprese usually has mozzarella, but the feta cheese seemed to work a little better for this one.
What you'll need:
1 Cup of quinoa
1 red pepper roasted
1 Cup of cherry tomatoes 
1/2 C Feta cheese
1/3 C Fresh basil
2 big handfuls of fresh spinach
Balsamic Vinegar
Olive oil
Instructions:
First get your quinoa cooking, and while it's on the stove put cherry tomatoes on a baking sheet lined in tinfoil. Sprinkle with S&P and bake at 375 degrees for 5-10 min until nice and roasted. Next roast your red pepper by broiling in for a couple of minutes brushed in oil. Once skin is blackened, put in a bowl of cold water and let cool off. Then simply remove the peel. Chop the roasted red peppers into bite sized pieces. Now crumble up your feta cheese and chop up the fresh basil. Now all you have to do is combine everything in a nice big bowl, pour the balsamic vinegar and a tiny bit of olive oil and mix it all together! I like this served warm, but it's also really good cold!

The big 3-0.

Today this little stinker, the man that I love with all of my heart turns 30! I can't even handle how ridiculously cute Derek is in this photo! It's crazy to think that I have loved him for most of his 20's and that I get to love him for all of his 30's. He truly is the most incredible man and I am so proud to be his wife. We have had adventures all over the world together, he has supported me through absolutely everything and is a huge reason why I get to do what I do, and I am so grateful to him. He is the most patient man I know, he is funny and loving and kind. He's the go-to tech-y guy in the family, but will do just about anything for friends or family when they need a hand. All around, he's just one of the best guys around. Fact.
Derek, if you're reading this, know that I love you to the moon and back and I'm so so glad that you were born! I can't wait to see what our thirties have in store! Now it's time to close my computer and go celebrate you!

Red & white forever.

Well, it's July 1 and up here in Canada that means it's our beautiful country's birthday! 
What's exciting about this Canada Day is that we have the day off! After working in Osborne village for the long weekend street festival for so many years and then out with the trailer, it was time for a break. After almost 10 years of working every single July 1 (and often the day before or after) the time has come to take a breather from the crazy street festival. Don't worry though, we'll be back, we just needed a little break. A tiny part of me is a teensy bit sad because I've made some pretty incredible memories in the past 9 years! I'll miss the dance parties in the street, hotdogs for lunch, bubble tea deliveries, the heatwave that melts through shoes, party cups, run-in's with long lost friends, and seeing ex-boyfriends running down the street dressed as Captain Canada wearing our flag as a cape. To all of our fellow Canadians, we hope you have a fun and safe day partying in the streets, or a relaxing day at the lake or wherever you may be. Now, we're off to wander the streets in the scorching heat, fill our bellies with cotton candy and spend time with friends over BBQ's and drinks! What are your long weekend plans?
